I love tamales and now that I know how to make them I am going to love them more. With having so much left over turkey from Thanksgiving, I decided to follow the recipe for turkey tamales on All Recipes. We had a ton of turkey left so I of course had to adjust the recipe for the amount I was going to make. We ended up with 10 dozen. First thing I did was shred up the turkey into smaller pieces. Then I went and got the seasonings and measured out what I was going to use for the masa and the turkey. I first mixed the turkey with the seasonings. Then I went a head a mixed up the masa. After I had the turkey ready and the masa ready I began the process of putting them together. The end result delicious. Everyone who tried them loved them. Learning How To Make Tamales
After going to Texas on vacation in 2020 I have discovered a love for tamales! They make the best tamales in Texas, we had cream cheese and jalapeno ones and we had a sweet cream cheese one, it tasted almost like bread pudding. I have been wanting to learn how to make tamales for awhile now and my sister in law showed me this past week. We ended up making 10 dozen cream cheese and jalapeno ones, they were a huge hit. Super spicy but my daughter loved them. Laying in bed the other night, I knew I wanted to make more tamales, because to be honest making tamales is kind of relaxing. So I started Googling different tamales. Did you know you can make almost anything into a tamale? Pumpkin pie, apple pie, all the dessert ones I found had me drooling. Often times I find myself sitting here with a sweet tooth. Nine times out of ten we don't have much in the house for sweets. With living a healthier lifestyle we don't bring in a bunch of junk. I remember in the day we always had ice cream in the freezer and the pantry was stocked with the latest junk food. Now we have whole wheat products and veggies. Who can go wrong with some yummy veggies, right? However, veggies cannot settle a sweet tooth. For this I like to keep some great baking products on hand. Almost everything I do in the kitchen, comes from Pinterest! I have made it a habit to do a large part of my monthly meal planning based off meals I have seen on pinterest. Each month I will start a new pinterest board, and I will go through and pin things that look ever so yummy, and things I think my family would enjoy. With eating healthier, it has been a challenge for me, to cook meals that are rich in flavor, and low in calories. What makes things even more difficult, is I am a sweets lover. My main downfall is chocolate! So when I see a "healthy" dessert on pinterest, I of course have to check it out. I mean what type of mom and wife would I be if I deprived my family of sweets as well! Taco Pie Via Pinterest
As I said not long ago, I was going to go ahead, and do some posts about what I have found on pinterest, my experience with making it, and whether or not my family liked it. Last night for dinner we went with the Taco Pie that I first discovered on pinterest. Does that not look so tasty! We were wanting something quick and easy and this looked like it would do the job, and since we all love Mexican foods we had a feeling this was going to be a hit! We made the guacamole sauce fresh instead of purchasing from the store. We then followed the recipe, and within about 30 minutes including cooking the chicken dinner was complete! We did forget to drain the chilis, so we did have a little liquid in the mix, over all though this was so yummy, and so filling we will be having it again! Using Pinterest For Meal Planning
Meal planning can be tough especially if you're so use to cooking from a box. When I decided to do a menu I had no idea what I was going to cook. When we turned to eating healthier, we went to mostly all chicken. Normal way to cook our chicken was little seasonings and bake it in the oven. We then would add a side and some veggies. Eating the same thing, the same way over and over again can get a bit boring. So this month I wanted to switch things up on my family. I wanted to bring new meals to the table that were still tasty and a bit more healthier for us. What better way to make a menu by hitting up the one and only Pinterest! As I browsed all the yummy photos to find different meals to cook, by tummy started talking to me, but in the end it was so worth it. Meal Planning
For many years I have went grocery shopping blinded. What I mean by blinded is not really knowing what I was going to cook through-out the week. At one time we would eat nothing but boxed meals, this made shopping easy. Ground beef, tuna fish, hamburger helper, stuffing, mac and cheese, easy to make, cheap to make, we bought it. It wasn't until recently I learned a little trick about shopping. The key to a healthy dinner is planning out the dinners and having a clue. So I grabbed a clue and I sat down and made out an actual menu. I always thought menus were for school and restaurants, I never thought I would have one in my kitchen. You have no clue about menu planning? Yea know worries me either, but I pretended I did when I went and did mine out. Grab a pen and piece of paper, and make a list of at least 20 different meals.
